Okroshka with Ayran
(6 servings)

Ingredients:

  • Ayran – 1000 ml
  • Falukorv/turkey – 400 g
  • Chicken eggs – 4 pcs.
  • Potatoes – 4 pcs.
  • Cucumber – 2 pcs.
  • Green onions – 2 pcs.
  • Dill – 6 sprigs
  • Mustard – 2 tsp.
  • Salt – to taste

🥣 Step-by-step cooking

  1. Wash the potatoes thoroughly, boil them with the skin until soft, let them cool, peel them and cut them into small cubes.
  2. Hard boil the eggs (10 minutes), let them cool, peel them and cut them into cubes.
  3. Cut the cucumbers into small cubes.
  4. Finely chop the green onions.
  5. Chop the dill and remove any hard stems.
  6. Cut the sausage into small, neat cubes.
  7. Mix the potatoes, eggs, sausage, cucumber, green onions and dill in a saucepan.
  8. Add 2 teaspoons of mustard, season with salt to taste and stir gently.
  9. Pour over very cold Ayran.
  10. Stir and ready to serve.

PS: Okroshka is especially good when it is well chilled.
